Cocktail Egg Balls

Classic deviled egg with a twist. Not only is it delicious but looks like you have spent hours preparing.
Ingredients
  • 6 hard cooked eggs, finely chopped
  • 3 bacon strips, cooked and crumbled
  • ¼ cup mayonnaise
  • ½ tablespoon finely chopped pimento
  • 1 teaspoon minced onion
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ¼ teaspoon prepared mustard
  • 2 tablespoons chopped parsley (optional)
  • 1 cup (4 ounces ) shredded cheddar cheese
Instructions
  1. In a bowl, combine the first eight ingredients until creamy
  2. Mix the chopped parsley and shredded cheddar cheese in a separate bowl
  3. Shape the creamy egg mixture into 1 inch balls
  4. Roll in cheese and parsley combination
  5. Cover and refrigerate until ready to serve
Notes
May replace the pimento with olives for a stronger flavor

 

Buffet Snack Kabobs

Mix and match flavors, textures and colors to heart's content! This simple, flavorful recipe offers you many options.
Ingredients
  • Fruit = Seedless grapes, Kiwi fruit, pineapple chunks, melon balls, strawberries, blueberries, dried or fresh figs
  • Vegetable pieces = cherry tomatoes, broccoli, cucumbers, red or sweet onions, bell peppers, cauliflower, mushrooms
  • Meat cubes = Cooked ham, corned beef, salami, turkey
  • Cheese cubes = Monterey Jack, Cheddar, Swiss
  • Assorted pitted olives
  • Assorted pickled vegetables
  • Cocktail toothpicks
Instructions
  1. Wash the fruit
  2. Cut or peel as necessary
  3. On each of the toothpicks, thread your choice of 3 of the above suggested ingredients
  4. To serve, arrange the kabobs on a serving platter
Notes
Variation: You may also add cooked shrimp or scallops
