Cocktail Egg Balls

Classic deviled egg with a twist. Not only is it delicious but looks like you have spent hours preparing.
  • 6 hard cooked eggs, finely chopped
  • 3 bacon strips, cooked and crumbled
  • ¼ cup mayonnaise
  • ½ tablespoon finely chopped pimento
  • 1 teaspoon minced onion
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ¼ teaspoon prepared mustard
  • 2 tablespoons chopped parsley (optional)
  • 1 cup (4 ounces ) shredded cheddar cheese
  1. In a bowl, combine the first eight ingredients until creamy
  2. Mix the chopped parsley and shredded cheddar cheese in a separate bowl
  3. Shape the creamy egg mixture into 1 inch balls
  4. Roll in cheese and parsley combination
  5. Cover and refrigerate until ready to serve
May replace the pimento with olives for a stronger flavor


Candied Bacon

Great snack while watching football games! Grab a beer, put up your feet and start snacking.
  • 1½ pounds thinly sliced good quality bacon
  • 1½ cups of brown sugar
  1. Spread brown sugar on a platter
  2. Lay bacon slices out on brown sugar until it adheres to bacon
  3. Turn bacon over until this side is also coated with brown sugar
  4. Line a broiler pan with aluminum foil
  5. Arrange in a single layer on broiler pan
  6. Bake until the bacon is crisp and bubbly
  7. Remove from boiler and place on paper towels to drain and cool
The more sugar you use, the crispier the bacon tends to get


Bacon and Cream Cheese Roll-ups

Great holiday recipe! Set these out on the buffet table and get out of the way quickly, so you don't get trampled.
  • 1 (1 pound) loaf white bread, crusts trimmed
  • 1 (8 ounce) package garlic herb cream cheese, softened
  • 1 pound good quality sliced bacon, cut in half
  1. Preheat oven to 375 degrees
  2. Cut each slice of white bread in half horizontally
  3. Spread evenly with garlic herb cream cheese
  4. Tightly roll each piece of bread with half a piece of bacon. The bacon should be on the outside of the bread. Secure with toothpicks.
  5. Arrange roll ups in a single layer on an ungreased baking sheet. Bake in the preheated oven 30 minutes, or until bacon is no longer pink and bread is lightly browned.
  6. Drain on paper towels for about 5 minutes to cool a bit, and serve.
Variation: Use pineapple cream cheese and then sprinkle a little brown sugar over the bacon before baking Once they are secure with the toothpicks you can go ahead and bake them, or you can place them in the fridge or the freezer to bake later (if baking from frozen, add about 5-10 minutes to your cooking time).


Lacy Parmesan Crisps

Simple! Wonderful! Thin rounds of baked cheese.
  • 1½ cups of grated Parmesan cheese (approx 6 ounces)
  • Seasonings or bits of bacon (optional)
  1. Preheat oven to 375 degrees
  2. Line a large cookie sheet with parchment paper
  3. Spoon Parmesan by level tablespoons, about 3 inches apart on cookie sheet
  4. Flatten each mound lightly to form a 2 inch round circle
  5. Bake until the edges turn a light golden color
  6. Transfer the parchment paper to a rack and cool for 2 minutes
  7. Transfer the crisps to a paper towel
  8. Repeat with the remaining cheese
Helpful hints: They run a little while heating Remove them from the parchment paper before they totally cool or they will stick Parmesan is salty -- do not add a seasoning with a lot of salt A little dash of garlic powder is delicious Eat as is or use for dipping


Apricot Wraps

Great party finger food for teens and adults!! Sweet, salty and nutty flavor.
  • 1 (14 ounce) package of dried apricots
  • ½ cup whole almonds
  • 1 pound sliced proscuitto ham
  • ¼ cup plum or apple jelly
  • 2 tablespoons soy sauce
  • toothpicks
  1. Fold each apricot around an almond.
  2. Cut proscuitto ham strips into thirds, wrap a strip around each apricot and secure with a toothpick.
  3. Place on two ungreased 15 x 10 x 1 inch baking pans.
  4. Bake, uncovered at 375 degrees for 15 minutes or until proscuitto ham is crisp, turning once.
  5. In a small saucepan, combine jelly and soy sauce, cook and stir over low heat for 5 minutes or until warmed and smooth.
  6. Remove apricots to paper towels to drain. Serve with sauce.
The original recipe calls for 1 pound sliced bacon. If you use the bacon add 10 minutes to cooking time. (Teens seem to prefer the bacon -- it is also cheaper to buy than the proscuitto ham) For a variation: You may use dried pineapple, water chestnuts and bacon.
