Classic Brigadeiro : White Chocolate

Variation of popular Brazilian candy. Also known as "Branquinho."
Ingredients
  • 1 (14 oz) can sweetened condensed milk
  • 1 tablespoon butter
  • 2 tablespoons of white chocolate (preferably powder)
  • shredded white chocolate
Instructions
  1. In a medium non-stick pan, mix the milk, butter and white chocolate. On low heat stir constantly with a wooden spoon.
  2. Continue stirring and cooking until it thickens and becomes more difficult to stir. You will start to see the bottom of the pan more clearly. When the mixture seems more like a dough and less like a batter, and it pulls from the sides of the pan easily, it is done. This should take approximately 20 - 25 minutes.
  3. Transfer to a greased plate and spread. Let it cool. (about 30 to 45 minutes)
  4. Spread the shredded white chocolate into a separate dish.
  5. To shape the brigadeiro into balls, take a teaspoonful of mixture and roll it between your buttered hands.
  6. Roll in shredded white chocolate.
  7. Transfer the ball to a mini baking cup or square of parchment for serving. Keep in an airtight container for up to 3 days.

  • If desired for decoration, 1 package chocolate sprinkles
Instructions
  1. Add sweetened condensed milk, butter and cocoa in a medium non-stick pan.
  2. Stir constantly with a wooden spoon on low heat.
  3. Continue stirring and heating until the brigadeiro mix thickens and becomes more difficult to stir.
  4. You will start to see the bottom of the pan more clearly.
  5. When the mixture seems more like a dough and less like a batter, and it pulls from the sides of the pan easily, it is done.
  6. This should take approximately 20 - 25 minutes.
  7. Transfer the brigadeiro batter to a greased plate and spread.
  8. Let it cool. (about 30 to 45 minutes)
  9. If desired, pour the chocolate sprinkles into a separate small dish or plate.
  10. When the brigadeiro batter is cool, it is ready to be shaped into small round balls.
  11. To shape the brigadeiro into balls, take a teaspoonful of mixture and roll it between your buttered hands.
  12. Drop the ball into the dish of sprinkles and roll it around to coat all sides.
  13. Transfer the ball to a mini baking cup or square of parchment for serving.
  14. Brigadeiros will keep in an airtight container for 3-5 days.

Ingredients
  • 50 pretzel rings...you can also use mini-round pretzels, checkerboard or windowpane shaped pretzels.
  • 1 package Hershey's chocolate kisses and/or Hershey's chocolate hugs (8 ounces).
  • ¼ cup red and green M&M's.
Instructions
  1. Preheat oven to 275 degrees Fahrenheit.
  2. Place the pretzels in rows on a greased baking sheet.
  3. Place a chocolate kiss in the center of each pretzel.
  4. Bake at 275 degrees Fahrenheit for 2-3 minutes or until the chocolate softens.
  5. Remove from oven.
  6. Carefully place one M&M in the center of the kiss, pressing down slightly, so the chocolate fills the pretzel.
  7. Refrigerate or freeze for 10-20 minutes until firm.
Notes
Makes 4 dozen. Reindeer Belly Buttons freeze well. You can use a variety of Hershey's kisses (milk chocolate, dark chocolate, hugs) but use only one type per sheet as they melt at different rates. Hugs and caramel Hershey's kisses take longer to soften. Use green and red M&M's at Christmas, red and pink M&M's for Valentine's Day, pastel M&M's for Easter.
