Cocktail Egg Balls

Classic deviled egg with a twist. Not only is it delicious but looks like you have spent hours preparing.
  • 6 hard cooked eggs, finely chopped
  • 3 bacon strips, cooked and crumbled
  • ¼ cup mayonnaise
  • ½ tablespoon finely chopped pimento
  • 1 teaspoon minced onion
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ¼ teaspoon prepared mustard
  • 2 tablespoons chopped parsley (optional)
  • 1 cup (4 ounces ) shredded cheddar cheese
  1. In a bowl, combine the first eight ingredients until creamy
  2. Mix the chopped parsley and shredded cheddar cheese in a separate bowl
  3. Shape the creamy egg mixture into 1 inch balls
  4. Roll in cheese and parsley combination
  5. Cover and refrigerate until ready to serve
May replace the pimento with olives for a stronger flavor


Candied Bacon

Great snack while watching football games! Grab a beer, put up your feet and start snacking.
  • 1½ pounds thinly sliced good quality bacon
  • 1½ cups of brown sugar
  1. Spread brown sugar on a platter
  2. Lay bacon slices out on brown sugar until it adheres to bacon
  3. Turn bacon over until this side is also coated with brown sugar
  4. Line a broiler pan with aluminum foil
  5. Arrange in a single layer on broiler pan
  6. Bake until the bacon is crisp and bubbly
  7. Remove from boiler and place on paper towels to drain and cool
The more sugar you use, the crispier the bacon tends to get


Bacon and Cream Cheese Roll-ups

Great holiday recipe! Set these out on the buffet table and get out of the way quickly, so you don't get trampled.
  • 1 (1 pound) loaf white bread, crusts trimmed
  • 1 (8 ounce) package garlic herb cream cheese, softened
  • 1 pound good quality sliced bacon, cut in half
  1. Preheat oven to 375 degrees
  2. Cut each slice of white bread in half horizontally
  3. Spread evenly with garlic herb cream cheese
  4. Tightly roll each piece of bread with half a piece of bacon. The bacon should be on the outside of the bread. Secure with toothpicks.
  5. Arrange roll ups in a single layer on an ungreased baking sheet. Bake in the preheated oven 30 minutes, or until bacon is no longer pink and bread is lightly browned.
  6. Drain on paper towels for about 5 minutes to cool a bit, and serve.
Variation: Use pineapple cream cheese and then sprinkle a little brown sugar over the bacon before baking Once they are secure with the toothpicks you can go ahead and bake them, or you can place them in the fridge or the freezer to bake later (if baking from frozen, add about 5-10 minutes to your cooking time).


Marinated Feta Cheese

Spend time with your guests. Make these the day before your party. Colorful and delicious.
  • 1 pound Feta cheese
  • 4 tablespoons of Italian Vinaigrette
  • 1½ teaspoon of finely chopped fennel
  • 1½ teaspoon of finely chopped rosemary
  • ¼ teaspoon crushed red pepper
  • ¼ teaspoon grated lemon peel
  • Party toothpicks
  1. Cut cheese into 1 inch cubes
  2. In small bowl mix the remaining ingredients
  3. Add cheese cubes and mix lightly
  4. Cover and refrigerate for at least one hour
Best if refrigerated for 12 hours May replace feta cheese with mozzarella Serve with a variety of crackers or bread chunks


Beef Barbecue Baskets

Beef barbecue with a twist.
  • 1 (12-ounce) can buttermilk biscuits
  • 1½ cups cooked shredded beef with barbecue sauce
  • ½ cup shredded Cheddar cheese
  • Muffin pan
  1. Preheat oven to 400 degrees
  2. Place each biscuit in one muffin cup. Press biscuit down into bottom of each cup until about ¼-inch thick
  3. Press biscuit up side of muffin cups to form crust
  4. Divide beef evenly into biscuits (about 2½ tablespoons each)
  5. Sprinkle with cheese
  6. Bake 20–25 minutes until biscuit edges are golden and barbecue beef is thoroughly heated
May substitute with pork barbecue.


Buffet Snack Kabobs

Mix and match flavors, textures and colors to heart's content! This simple, flavorful recipe offers you many options.
  • Fruit = Seedless grapes, Kiwi fruit, pineapple chunks, melon balls, strawberries, blueberries, dried or fresh figs
  • Vegetable pieces = cherry tomatoes, broccoli, cucumbers, red or sweet onions, bell peppers, cauliflower, mushrooms
  • Meat cubes = Cooked ham, corned beef, salami, turkey
  • Cheese cubes = Monterey Jack, Cheddar, Swiss
  • Assorted pitted olives
  • Assorted pickled vegetables
  • Cocktail toothpicks
  1. Wash the fruit
  2. Cut or peel as necessary
  3. On each of the toothpicks, thread your choice of 3 of the above suggested ingredients
  4. To serve, arrange the kabobs on a serving platter
Variation: You may also add cooked shrimp or scallops


Red Wine Sausage Slices

These little sausages pack big flavor. It is a welcome bite sized addition to any gathering.
  • 1 pound chorizo or kielbasa links
  • ¼ cup dry red wine (such as Bordeaux, Merlot or Rioja)
  • 1 (8 ounce) can tomato sauce
  • 1 tablespoon olive oil
  • ¼ cup finely chopped onion
  • 2 minced garlic cloves
  • 1 teaspoon paprika
  • Dash of ground red pepper (cayenne)
  1. Cut sausage into ½ inch thick slices
  2. Heat oil in large skillet over medium heat until hot
  3. Add onion, stirring occasionally for about 4 minutes until softened
  4. Add garlic to mixture and cook for about 1 minute
  5. Add sausage slices and cook for 4 minutes turning once (should be lightly browned)
  6. Stir in the paprika and ground red pepper
  7. Add tomato sauce and wine
  8. Cook for 6 minutes, stirring occasionally
  9. Serve warm sausage mixture with cocktail toothpicks
May use smoked sausage or Polish sausage links


Mini Holiday Pizzas

Holiday appetizers don't get any easier than this. These holiday shaped mini pizzas are a crowd pleasing favorite.
  • 1 package (13.8 ounces) refrigerated pizza crust
  • 1 (8 ounce) jar of pizza sauce
  • 15 slices plum tomatoes
  • 1 cup (4 ounces) grated mozzarella cheese
  • Holiday shaped cookie cutters
  1. Preheat oven to 425 degrees
  2. Lightly spray cookie sheet with nonstick cooking spray
  3. Unroll dough on to cookie sheet
  4. Press dough until it forms a 15x10 inch rectangle
  5. With your holiday shaped cookie cutters, cut the dough into shapes
  6. Remove excess dough
  7. Bake for 6 to 8 minutes or until set
  8. Remove the partially baked crusts from oven and let cool for 3 to 4 minutes
  9. Spread each crust with pizza sauce
  10. Top each pizza with one tomato slice
  11. Generously sprinkle mozzarella cheese over tomato slice
  12. Return to oven and bake an additional 3 - 5 minutes or until cheese is melted and crusts are golden brown
Variation: May use pesto sauce in place of pizza sauce May substitute Parmesan cheese in place of mozzarella cheese


Meat and Bean Patties

Great Southwestern style appetizer for teenagers and buffets.
  • ½ pound (8 ounces) lean ground beef
  • 1 cup Refried Beans (8¼ ounce can)
  • 2 tablespoons Taco Sauce
  • Guacamole (optional)
  • Cherry tomatoes (optional)
  1. Thoroughly mix together meat, refried beans and taco sauce
  2. Chill in refrigerator for 30 minutes
  3. Shape mixture into 15 patties about 1½ inches in diameter
  4. In a skillet on the stove fry them about 4 minutes on each side (until brown)
  5. Drain on paper towel
  6. Top with a tablespoon of guacamole (optional)
  7. Top guacamole with a cherry tomato (optional)
  8. Place on platter
I recommend doubling this recipe. Teenage boys scarf these down!!
