Sweet Potatoe Brigadeiro

Very sweet. Almost tastes like Sweet Potatoe Casserole.
Ingredients
  • 1 (14 oz) can sweetened condensed milk
  • ½ cup sweet potatoe filling (15 oz can)
  • 1 tablespoon butter
  • ⅛ tsp cinnamon
  • granulated sugar for rolling
Instructions
  1. In a medium non-stick pan, mix the milk, butter, sweet potatoe filling and cinnamon.Stir constantly with a wooden spoon on low heat.
  2. Continue stirring and cooking until it thickens and becomes more difficult to stir. You will start to see the bottom of the pan more clearly. When the mixture seems more like a dough and less like a batter, and it pulls from the sides of the pan easily, it is done. This should take approximately 25 - 30 minutes.
  3. Transfer to a greased plate and spread. Let it cool. (about 30 to 45 minutes)
  4. Put the sugar into a separate dish.
  5. To mold the brigadeiro into balls, take a teaspoonful of mixture and roll it between your buttered hands.
  6. Roll in sugar
  7. Transfer the ball to a mini baking cup or square of parchment for serving. Keep these in refrigerator if saving for a later date.
Notes
Make sure the sweet potatoe is pureed. This recipe may take a little longer to cook. Variation: You may replace the sweet potatoe with ½ cup pumpkin puree You may also roll these in a sugar/cinnamon combination or chopped walnuts.

 

Sweet Corn Brigadeiro

Ingredients
  • 1 can (14 oz) sweetened condensed milk
  • 1 can (15 oz) sweet corn kernels, drained
  • 1 tablespoons butter
  • teaspoon ground cinnamon
  • sugar/cinnamon mixed
Instructions
  1. Place the drained sweet corn kernels and the sweetened condensed milk in a blender or food processor and purée them.
  2. In a medium non-stick pan, pour the mixture. Add the butter and cinnamon. Stir on low heat constantly with a wooden spoon.
  3. Continue stirring and cooking until it thickens and becomes more difficult to stir. You will start to see the bottom of the pan more clearly. When the mixture seems more like a dough and less like a batter, and it pulls from the sides of the pan easily, it is done. This should take approximately 20 - 25 minutes.

Notes
I recommend buying the sugar/cinnamon mixture pre-made in the spice section of the store. If you are going to mix up your own do not overdue the cinnamon. It can be overpowering. Variation: You may just roll in sugar.

 

Cheese Brigadeiros

Ingredients
  • 1 (14 oz) can of sweetened condensed milk
  • 1 tablespoon butter
  • 3 tablespoons grated Parmesan cheese
  • Extra grated parmesan cheese to cover
Instructions
  1. In a medium non-stick pan, mix the milk and butter on low heat. Stir constantly with a wooden spoon.
  2. Before bringing the condensed milk to a boil slowly add the grated cheese stirring constantly.
  3. Continue stirring and cooking until it thickens and becomes more difficult to stir. You will start to see the bottom of the pan more clearly. When the mixture seems more like a dough and less like a batter, and it pulls from the sides of the pan easily, it is done. This should take approximately 20 - 25 minutes.
  4. Transfer to a greased plate and spread. Let it cool. (about 30 to 45 minutes)
  5. Put the extra shredded cheese on a separate dish.
  6. To mold the brigadeiro into balls, take a teaspoonful of mixture and roll it between your buttered hands.
  7. Transfer the ball to the dish of cheese and roll it around to coat all sides.

Pistachio Brigadeiro

  • 1 tablespoon butter
  • 9 oz unsalted shelled pistachio
Instructions
  1. Place the pistachios in a food processor and finely grind them. Set aside ½ cup of the ground pistachio.
  2. In a medium non-stick pan, mix the milk, butter and remaining pistachio on low heat. Stir constantly with a wooden spoon.
  3. Continue stirring and cooking until it thickens and becomes more difficult to stir. You will start to see the bottom of the pan more clearly. When the mixture seems more like a dough and less like a batter, and it pulls from the sides of the pan easily, it is done. This should take approximately 20 - 25 minutes.
  4. Transfer to a greased plate and spread. Let it cool. (about 30 to 45 minutes)
  5. Spread remaining pistachio on to a separate dish.
  6. To shape the brigadeiro into balls, take a teaspoonful of mixture and roll it between your buttered hands.

  • 2 tablespoons finely grated white chocolate
  • Zest of 3 lemons
  • grated white chocolate for topping

  2. Continue stirring and cooking until it thickens and becomes more difficult to stir. You will start to see the bottom of the pan more clearly. When the mixture seems more like a dough and less like a batter, and it pulls from the sides of the pan easily, it is done. This should take approximately 20 - 25 minutes.
  3. Remove from the heat and add the lemon zest and stir well.
  4. Transfer to a greased plate and spread. Let it cool. (about 30 to 45 minutes)
  5. Put the remaining grated white chocolate into a separate dish.
  6. To mold the brigadeiro into balls, take a teaspoonful of mixture and roll it between your buttered hands.
  7. Transfer the ball to the dish of grated white chocolate and roll it around to coat all sides.

Notes
Lemon rind can be bitter.Very important -- make sure you only zest the yellow part of the rind not the white. Variation: For a sweeter taste this can also be rolled in sugar.

Ingredients
  • 1 (14 oz) can sweetened condensed milk
  • 1 tablespoon of butter
  • 3 tablespoons of cocoa powder
  • 2 small ripe bananas mashed
  • shredded chocolate
Instructions
  1. In a medium non-stick pan, mix the milk, butter and chocolate on low heat. Stir constantly with a wooden spoon. After five minutes add the mashed banana.
  2. Continue stirring and cooking until it thickens and becomes more difficult to stir. You will start to see the bottom of the pan more clearly. When the mixture seems more like a dough and less like a batter, and it pulls from the sides of the pan easily, it is done. This should take approximately 20 - 25 minutes.
  3. Transfer to a greased plate and spread. Let it cool. (about 30 to 45 minutes)
  4. Spread the shredded chocolate into a separate dish.
  5. To mold the brigadeiro into balls, take a teaspoonful of mixture and roll it between your buttered hands.
  6. Roll in the shredded chocolate.
  7. Transfer the ball to a mini baking cup or square of parchment for serving. Keep in an airtight container for up to 3 days.

Hazelnut -Nutella Brigadeiros

  • 1 tablespoon butter
  • 2 tablespoons Nutella
  • Tin of Chocolate Hazlenut Pirouline

  2. Continue stirring and cooking until it thickens and becomes more difficult to stir. You will start to see the bottom of the pan more clearly. When the mixture seems more like a dough and less like a batter, and it pulls from the sides of the pan easily, it is done. This should take approximately 20 - 25 minutes.
  3. Transfer to a greased plate and spread. Let it cool. (about 30 to 45 minutes)
  4. Open the tin of Chocolate Hazlenut Pirouline. Take out about five at a time and grind them. Lay the mixture out on a flat platter.
  5. To shape the brigadeiro into balls, take a teaspoonful of mixture and roll it between your buttered hands. Transfer the ball to the platter of ground chocolate hazlenut piroulines and roll it around to coat all sides. Transfer the ball to a mini baking cup or square of parchment for serving. They keep in an airtight container for up to 3 days.
Notes
Variation: Chop 20 whole hazelnuts (preferably skinned). If you have to remove the skin, which is bitter and unpleasant, roast them at 350 for about 15 minutes to make the skins brittle, then rub them in a towel to wipe the skins off. You can also buy pre-skinned hazelnuts, but you’d still have to roast them to get the best flavor. Roasting at low oven temperatures (about 5 minutes at 250° F), spread out on a cookie sheet, will give them a more intense "hazel" taste. Keep an eye on them -- do not let them burn!! Roll the brigadeiros in the chopped hazlenuts.
